Who doesn't love a giveaway?
I posted earlier this morning that I hit 98.5 pounds lost, despite being worried about my new focus on lower calories instead of low-carb. Part of the reason I was worried was because I cooked and ate this over the weekend:
Seriously. Drool.
I made nachos for the Steelers game (hubs is a die hard fan). He is almost as big of a fan of nachos as he is his Steelers. When we went to Key West on our cruise, he didn't order Key Lime pie from the restaurant we went to – he ordered nachos. The boy must try nachos everywhere we go.
So I made these nachos from Rocco DiSpirito's cookbook, “Now Eat This!” (aff. link) which has 150 recipes of old favorite comfort foods, but with less than 350 calories per serving.
Hubs had zero idea that these nachos were made with ground turkey instead of ground beef and that he ate greek yogurt instead of sour cream. I told him when he was halfway through scarfing his plate and he was shocked. Seriously, they were that good. Good wife points for me!
Then last night, I really wanted some comfort food, so I chose the macaroni and cheese recipe from the “Now Eat This” cookbook, and made it with some skepticism. It also used greek yogurt, lowfat cheese and panko bread crumbs? Confused, but undeterred, I made it and it turned out like this:
It was seriously good. And might I add: I am the laziest cook on the planet. LAZY. But these dishes were not only tasty, but they were EASY, and I didn't have any problems finding the ingredients for them. And the cookbook has pretty pictures (seriously, it makes a difference.)

Would love this cookbook! My healthy resolution for 2011 is to continue exploring ways to make fabulous and healthy food at home. I’ve come a long ways in 2010, and there’s more to go. I love experimenting in the kitchen and luckily my DH is a willing guinea pig. 🙂

I have several healthy resolutions for 2011. 1.) Stop smoking 2.) Significant diet changes 3.) Make exercise a habit, not a chore 4.) Give up sodas, diet or otherwise. I really need to just bite the bullet and buy a couple of good cookbooks. I am a pretty decent cook (I love to cook, but hate to clean up), but growing up in Texas I only know one way to cook. Fry it and if you can’t fry it cover it with copious amounts of cheese and sour cream. I am learning to change these habits though. BTW congrats on the -98.5, you’ll be in the -100 club before too long. I find a lot of inspiration in you commitment and candidness.

Excellent! Let’s hear it for lazy cooks! I am trying to do the healthy thing and cook at home more, so this would certainly help. I’m still in the process of deciding what my exact goals for this year are (procrastinator, much?) but the idea is that I will continue to eat healthy foods and live a better life overall – and hopefully lose some weight in the process.

Cool! The mac and cheese looks particularly intriguing. One of my healthy new year’s resolutions was to start making the processed foods that I usually buy in stores such as pesto, mayonnaise, certain cheeses, bread, and pasta. So far, so good! I was particularly amazed at how well the homemade mayo turned out-it was so cool to see oil and egg actually solidify like that!

I can’t bear to look too far ahead with regards to health/fitness goals, so I just have immediate, mini-goals. I want to try spinning class and get over my phobia of it. I plan to do that in the next few weeks with a girlfriend who just joined my gym. I want to run an 8K at the end of February in an hour or less. Those are my two mini-goals right now 🙂

My family already eats healthy, local, natural foods with very little processed foods in our diets. I raise free-range chickens and plan to grow a large garden in 2011. Additionally, an orchard is in the plans for this coming growing season!

My two big goals for this year are to run a half marathon with my sister in May and to start cooking more healthy meals for hubby and I. I hate to cook and we eat at different times so usually in our house meal time is just fend for yourself. I broke out the crockpot the other day so I can at least have a meal ready for him some days. Both dishes look delicious….My healthy goal for 2011 is to cut out sugar whenever possible. Its easy to not buy cookies and candy..its harder to check labels on everything to check for sugar. I was shocked when I saw sugar in my peanut butter…REALLY sugar in my peanut butter?????

Rocco’s new recipes are great! I just made the Eggplant Manicotti and it was amazing. My goals for the year are to learn to cook healthier versions of my family’s favorite foods..they’re teenagers & a very thin husband so this will be a challenge but so far so good. And weight loss is always a goal. I only need to lose 20 lbs but those are some very stubborn 20 lbs! I am also planning to walk a half marathon but I’m currently lacking the motivation 🙁

I have been hoping to get a copy of this book since I read about it a couple of weeks ago. As for my resolution: I’ve always been overweight but after graduating from college and not being able to find a job my self-esteem is at its lowest. Wow – those both look super delish! My healthy eating plan for this year is to cut back on overall calories instead of trying to eat “fat free” things. I have found that fat free items usually have more calories than the full or low fat items.

I am trying to get back on track and cook healthier foods and hopefully get back to losing the weight I started losing two years ago. Last year was full of a lot of medical issues that got me off track, but I’m hoping this year will have a more successful outcome to it!

I love Rocco!!! Serious. Celebrity. Chef. Crush. I have wondered if there is someone in his life who needed or needs to lose weight or live healthier because he put a ton of work into developing this cookbook and I would imagine that he could have done a cook book on almost any topic with great success.
Anywhoozle, my 2011 healthy living resolution is to exercise at LEAST 30 minutes a day, 6 days a week, no excuses. So far I am on track! I am also working on eating delicious, healthy food in reasonable portions and with reasonable calories. It sounds so simple when you type it out, how come it’s not so simple when living it out?

My goal is to eat healthier and cook more. I am totally LAZY when it comes to cooking but you said that you’re lazy also and that recipes are easy so I definitely want to get this book. I like that Now Eat This contains comfort food that is delicious but without all of the calories. Rocco Dispirito is awesome!

I’m love your blog and just found it a few months ago. My goals for 2011 is to focus more on myself. We adopted 4 children in November and I feel like for 2 years my focus has been on social workers etc. I need to lose about 80 pounds and although I haven’t been gaining, I’m not losing either. With 5 total children, it’s hard to find time to exercise, but I have been doing it with Just Dance 2 (which is how I found your blog by looking up others who used it); the kids can do it with me. So, my goals…take better care of myself so I can be a better mom.

Loved reading your reviews of the recipes. I love to cook, love to eat and am always trying to make the dishes I love more healthy. That’s one of my goals for this year, to get myself and my husband eating more low calorie meals, we eat good foods (as in natural, not much processed) but that doesn’t always equal healthy! Also trying to stop letting health issues and other things stand in the way of getting the exercise I need to lose weight. Congratulations on your amazing weight loss, you’re an inspiration!

First of all, LOVE Rocco! I’ve never read this book(s), but I’ve seen him on TV before and I can only imagine how great his recipes are.
Second, my healthy goal of 2011 is to be more adventurous with my healthy cooking. I typically cook fairly healthy, but I tend to get stuck in a rut, where I just keep making the same things over and over. So my goal for this year is to try and make at least 1 new recipe a week. So far, we’re three weeks in and I’ve made 5 new recipes already!

For my nutrition class we have to do a food journal with calories and carbs and fat grams and protein–for just one week–and I have gained 4 pounds doing it. So my health goal is to not keep a food journal. somehow it messes with my brain. Which is kind of weird, but I’m glad I know.

I had my second child last June with her came 74lbs! I now have 10lbs left and those last 10 are always stubborn. Doesn’t help that I love food! My goal for 2011 was to do a half marathon. I got hooked up with a website for a company that puts on many races. They do a series of 5 different races. You get a metal with each race and cool race gear. Anyways now that I see you can “collect all 5” I have to do all of them! So I kicked off 2011 new years day with a 5k (and it’s cold here in MN)! Now I will be doing 3 half marathons this year and a duathlon! Kinda crazy but those metals are enough to make me do it all!

I started out at 274 pounds and I was so sad nad though it was not possible to loes the weight I needed to lose. I am not sure what happened but Ihave been up at 5:30 every morning before work to go to the gym, and I am loving it. I have lost 12 pounds and so inspired by you! It is nice to see a real person go on this journey, and feel like I can do this also instead of looking at all those magazines thinking there is no way I can ever look like that!

I had lost over 20 lbs in 4 months with the help of my doctor, but since the holiday eating frenzy, I have hit a plateau. I got engaged for Christmas so I would love to get down to my goal weight for the wedding! (15 lbs to go)

That mac ‘n’ cheese is to die for!! Looks so yummy. My goal for 2011 is to continue my weight loss (about 45 lbs. down so far) and run a half marathon! I’m already making progress, getting back to eating only 1,600 calories a day and exercising for at least an hour nearly every day. But I need to start training for the run again. Since I completed a 10-mile race a couple weeks ago, I’ve been letting my knees rest. Time to hit the pavement again!

After reading the type of meat fast food restaurants use to make their burgers my husband & I have decided to stop going to fast food restaurants. If we are “desperate” then we’ll go to In-N-Out, El Pollo Loco, or Pandera. I’ve also started making homemade bread for my boys sandwiches & cooking healthier meals. Cooking healthier has been hard as my boys as I don’t have that many healthy cookbooks so winning one of Rocco’s would be GREAT!!

My goal this year is to start moving. I am recovering from my second foot surgery and for the last year haven’t been moving much because I have been in so much pain. I should be back on the treadmill within the next few weeks. I am also going to try to eat healthier. I am the worst cook ever and so my husband and I go out to eat every night. I absolutely love to cook (and bake!) unfortunately most of what I like to make I end up passing on eating because of the calories involved. I went out and bought this cookbook a few months after test-driving it from the library. I love it! I do have to say though I didn’t enjoy the Mac and Cheese as much as you seem to. I do want to give it another whirl though, I’m not sure I used the specific cheeses the recipe calls for (sometimes I subsitute based on what I have on-hand). This post has reminded me to break it back out!

I trained for a marathon last year and I’ve done a bunch of 5Ks & 10Ks but I want to do a half marathon this year! 🙂

I have a few goals for the year. The first is to lose another 10-15 lbs (I lost 20 last year) and also to build muscle. The second is to run a 10K (I ran my first 5K last year). My third goal is to be better about planning meals in advance (as in, before I do my grocery shopping so that I have the right ingredients when I want to cook).
